I hate oatmeal. But it’s one of the best things you can eat for your gut health, so alas, I surrender to that slop on a daily basis. I really put up a fight when I started eating it. I’ve tried every flavor and every brand. I finally got into a routine of just mixing my own, and *surprise!* I actually like it now. I don’t mix it daily (who has time for that?!), instead I mix an entire bag at a time and store it in large mason jars for quick use.
Each time I make this, I use a different nut mix. Just whatever looks good at the grocery store or at the farmer’s market. This time I’m using Brenham Kitchen mix, which contains nuts (no peanuts) and berries.
Oatmeal for Haters
8 cups steel cut or rolled oats
3 cups chopped nut mix
2 cups brown sugar
2 tablespoons cinnamon
In a large huge mixing bowl, mix oats, chopped nut mix, brown sugar, and cinnamon. Mix well. Ladle into large mason jars or pour into a large ziplock bag.
Yields: 16 cups (4 quart jars) which is about 16-32 servings depending on preferred serving amount of 1/2 to 1 cup
Note: I mix in a serving (about a tablespoon) of almond butter and just enough hot water to moisten the oats. This might be too dry for most folks but to me, the consistency is like a soft granola bar. It works for me.
How do you like your oatmeal?
Sounds good to me. Summer time for me.. cold steel cut oats with your same mix, no sugar and yogurt. Winter time warm with raisins and brown sugar.
That sounds yummy!
