Turkey Meatball Recipe (Low Sodium/GF)

One of my staple food prep/work lunch items is my husband’s meatballs. The man can cook! Everyone passing through the kitchen at work always comments on how wonderful they smell. Sometimes I share, most of the time I don’t. And so I don’t have to share anymore, I’m sharing his recipe so you can all make your own (because I’m greedy and stuff)!

Turkey Meatball Recipe


4 tbsp extra virgin olive oil

1 cup carrot, chopped

1 cup onion, chopped

4 heaping tbsp minced garlic

1 lb ground turkey breast (99%)

1 lb ground turkey (white and dark, 93%)

4 tbsp granulated garlic

4 tbsp granulated onion

1 tbsp coarse ground black pepper

1 tsp sea salt

4 tbsp Italian seasoning

3/4 cup 4C Crumbs, Plain, Gluten Free

2 tbsp tomato paste


Prep: Preheat Lodge Seasoned Cast Iron Skillet (if using) to 400 degrees. Heat oil in skillet on medium high, add chopped onion and carrot, garlic and sauté covered. Mix ground turkey, all seasoning, and sauteed carrot/onion/garlic mix with about 2 tbsp olive oil by hand. If hands stick, add more olive oil. Add breadcrumbs and tomato paste by hand, and add more olive oil if needed. Heat about a tablespoon olive oil in cast iron on medium-low heat. Roll balls and arrange in skillet, then place into pre-heated oven. Cook for ~20 minutes or until brown. Return skillet to stove top on medium-high to crisp bottoms as desired.


Yields: 8 servings (~44 meatballs)



The carrots add a bit of sweetness to the mix, and when I eat them cold for breakfast I don’t need a side dish because there’s plenty of carbs included…but they pair wonderfully with green beans!



And since we have these meatballs so often, we’ve had the pleasure of pairing them with some wonderful wines. They pair well with anything from white wine to rose to red! Turkey is just versatile like that!
