Nonna’s Divinity (First Attempt)

Well, an attempt was made. Riding a high from the peanut butter fudge success, I successfully screwed up the second recipe in the Nonna’s Recipes series, my great-grandmother Mawmaw’s divinity that my grandmother Nonna made every Christmas. I remember her struggling with it when the humidity was too high, so living in Houston, I’m already set up for failure with this one. Here’s what happened, and what became of the “end product.”

So what went wrong? Maybe everything. I don’t think I beat the egg whites long enough, or vigorously enough. I don’t think I got the syrup mix up to the proper temperature. Humidity in the house was 52%, and that’s probably too high. I just…I don’t know. It tasted fine, but who wants to eat divinity with a big dumb sticky spoon? Actually, the consistency reminded me of a jar of marshmallow fluff, so that is what became of it. What was remotely removable from the wax paper yielded an 8oz and 16oz mason jar. And we proceeded to make grilled fluffernutter sandwiches with this goo and crunchy peanut butter. They were quite delicious, but damn. When I attempt to make this again, I’ll post those results here as well. Wish me luck!
